By the end of summer you’ve enjoyed plenty of fresh produce from the garden. But don?t let your last harvest of the year go to waste. Use up those vegetables with this simple and delicious salsa recipe that only takes a few minutes!

6 garden fresh tomatoes
½ sweet onion
½ green bell pepper
1 clove garlic
¼ cup fresh cilantro
jalapeno peppers to taste
2 teaspoons olive oil
½ lime, juiced
 teaspoon salt
Place onion, bell pepper, garlic and jalapeno into a food processor or blender. Pulse until finely chopped. Next, add tomatoes, olive oil, lime juice and salt. Pulse a few times until it is the consistency you?d like.

Pro Tip: Let the salsa sit for at least 20 minutes (up to 24 hours) before serving so the flavors can come together for the best tasting results.
